Instructions
Step 1: Cook & Shred the Chicken
- Place chicken breasts in a large pot and cover with chicken broth.
- Bring to a boil, then reduce heat and simmer for 15-20 minutes or until fully cooked.
- Remove chicken from broth and shred using two forks. Set aside.
Step 2: Make the Gravy
- In a large pan, melt butter over medium heat.
- Whisk in flour and cook for 1-2 minutes until golden brown.
- Slowly pour in chicken broth, whisking continuously to avoid lumps.
- Add garlic powder, onion powder, paprika, salt, and pepper, stirring well.
- Simmer for 5-7 minutes until thickened, then stir in the shredded chicken.
Step 3: Prepare the Mashed Potatoes
- In a large pot, boil potatoes in salted water until fork-tender (about 15 minutes).
- Drain and mash with butter, milk, salt, and pepper until smooth and creamy.
Step 4: Assemble & Serve
- Scoop mashed potatoes onto a plate and top with shredded chicken gravy.
- Garnish with fresh herbs or cheese if desired. Serve hot and enjoy! 🍽️
Notes
- For extra flavor, add a splash of Worcestershire sauce or soy sauce to the gravy.
- Make it creamy: Swap some broth for heavy cream for an ultra-rich texture.
- Slow Cooker Version: Cook the chicken on low for 6-7 hours (or high for 3-4 hours), then shred and mix into the gravy.
- Gluten-Free Option: Use cornstarch instead of flour to thicken the gravy.
