Ingredients

Scale

🔹 Chicken & Seasoning:

  • 2 large boneless, skinless chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil

🔹 Creamy Sauce:

  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ¼ teaspoon red pepper flakes (optional)

🔹 Pasta & Garnish:

  • 8 oz fettuccine or penne pasta
  • ¼ cup fresh basil leaves, chopped
  • Extra Parmesan cheese for garnish

Instructions

Step 1: Season & Sear the Chicken

1️⃣ Pat the chicken dry with paper towels. Season both sides with garlic powder, Italian seasoning, salt, and black pepper.
2️⃣ Heat olive oil in a large skillet over medium-high heat.
3️⃣ Add the chicken breasts and cook for 4-5 minutes per side until golden brown. Remove and set aside.

Step 2: Make the Creamy Sun-Dried Tomato Sauce

4️⃣ In the same skillet, reduce heat to medium. Add minced garlic and cook for 30 seconds until fragrant.
5️⃣ Stir in sun-dried tomatoes and cook for another 1 minute.
6️⃣ Pour in chicken broth, scraping up browned bits for extra flavor.
7️⃣ Lower heat and stir in heavy cream and Parmesan cheese. Let simmer for 3-5 minutes until thickened.
8️⃣ Add red pepper flakes for a spicy kick (optional).

Step 3: Cook the Pasta

9️⃣ Meanwhile, cook pasta according to package instructions until al dente.
🔟 Drain the pasta, reserving ½ cup of pasta water in case you need to thin the sauce.

Step 4: Bring Everything Together

1️⃣1️⃣ Slice the cooked chicken into strips or cubes and return to the skillet.
1️⃣2️⃣ Add the cooked pasta and toss everything to coat in the creamy sauce.
1️⃣3️⃣ If the sauce is too thick, add a splash of reserved pasta water.
1️⃣4️⃣ Garnish with fresh basil and extra Parmesan cheese.

Step 5: Serve & Enjoy! 🍽️

1️⃣5️⃣ Serve immediately and enjoy this rich, creamy, and flavor-packed dish!

Notes

  • For extra richness, use half heavy cream and half cream cheese.
  • If the sauce gets too thick, add a bit more chicken broth or reserved pasta water.
  • Swap chicken breasts for chicken thighs for an even juicier result.
  • Want a keto-friendly version? Use zucchini noodles instead of pasta!
  • For a vegetarian version, swap chicken for mushrooms or tofu.
